  • 2 lbs bone-in, skin-on chicken thighs/drumsticks

  • 2 tablespoons olive oil

  • 4 carrots, sliced

  • 3 celery stalks, chopped

  • 4 medium potatoes, diced

  • 5 cups chicken broth

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 2 bay leaves

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sear the Chicken: In a large oven or heavy pot, heat the olive oil over medium-high heat. Season the chicken with salt and pepper. Add to the pot, skin-side down, and sear for about 5-7 minutes until golden brown. Flip and sear the other side for an additional 5 minutes. Remove the chicken from the pot and set aside.

  2. Sauté Vegetables: In the same pot, add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until softened, stirring occasionally.

  3. Deglaze the Pot: Pour in a splash of chicken broth, scraping the bottom of the pot to release any browned bits. This adds flavor to the stew.
