Ingredients:

Ready to roll puff pastry

1 block of Brie

Cranberry Sauce

Fresh cranberries (can also use from frozen)

1 egg for egg wash

Method:

Pre heat oven to 200 celsius (180 if it’s a fan oven)

1. Roll out the pastry and cut into approx 12 squares (this makes 2 trays)

2. Line a baking tray with grease proof paper. Put the squares onto the tray. 6 per tray.

3. Cut Brie into roughly 1 inch cubes or slices.

4. Top the Brie with cranberry sauce and add a fresh cranberry on top.

5. Fold the squares into parcels, pressing firmly to close them together at the centre.

5. Top each parcel with a cranberry

6. Whisk egg to form an egg wash and coat each parcel.

7. Place trays into oven and bake until golden brown. (Roughly 25 mins depending on your oven.)

Once ready, serve with an extra handful of cranberries and chopped nuts (I like walnuts but pecans are also great). Enjoy!

Note: If you prefer you can allow the parcels to cool and have them cold or you can also freeze them for another day.
